Vienosti omenaisten toffeiden ohjeen bongasin jo kauan, kauan sitten Food Republicin sivuilta. Pienensin hieman alkuperäisen reseptin tarveaineiden määrää ja työstin noin 2/3-kokoisen satsin. Hyvin toimivat joulunameina Vihreiden kuulien rinnalla!
Cupit muunsin deseiksi suht löperösti pyöristellen ja kahden eri sokerin sijasta käytin ruskeaa ruokosokeria. Siiderinä minulla oli jumalaista Dupontin calvados-tynnyreissä kypsytettyä omenasiideriä, jonka karkkimassasta ylijäänyttä osaa oli nautinollista lirppiä karamellejä keitellessä.

4½ dl suodattamatonta omenasiideriä
1 dl voita
2 dl ruskeaa ruokosokeria
1 dl kermaa
1 tl sormisuolaa
ripauksen kanelia
Tee näin:
Kaada siideri paksupohjaiseen kattilaan. Kuumenna kiehuvaksi, vähennä lämpöä ja anna porista hissukseen puolisen tuntia, kunnes nestettä on jäljellä desin verran.
Vuoraa kulmikas, korkeahkoreunainen astia leivinpaperilla. Itse käytin tähän satsiin neliskanttista 20x20-senttistä vuokaa. Leivinpaperista kannatta leikata sen verran iso pala, että sitä jää reilusti roikkumaan myös vuoan reunojen ulkopuolelle. Rytistele leivipaperi ensin palloksi, sillä saat ruttuisen paperin asettumaan astiaan helpommin.
Ota siiderikattila liedeltä. Lisää kattilaan kuutioitu voi, sokeri ja kerma. Sekoita hyvin.
Kuumenna kattilassa oleva seos kiehuvaksi. Laita kattilaan lämpömittarin anturi ja anna seoksen kiehua kohtalaisella lämmöllä sekoittamatta kunnes sen lämpötila on 118 astetta.
Ota kattila liedeltä. Lisää seokseen puolet sormisuolasta ja kaneli. Sekoita hyvin.
Kaada seos leivinpaperoituun astiaan. Ripottele seoksen päälle loput suolasta.
Anna seoksen jäähtyä hieman. Laita astia jääkaappiin kiinteytymään vähintää pariksi tunniksi.
Kun seos on kunnolla jähmettynyt, nosta se leivinpapereineen astiasta leikkuulaudalle. Leikkaa seos terävällä veitsellä haluamasi kokoisiksi paloiksi. Jos haluat, voit kääriä toffeet esimerkiksi leivinpaperi- tai sellofaanineliöihin.
Säilytä toffeet kylmässä ja ota ne huoneenlämpöön noin vartiksi ennen herkuttelua.
